ONE HEALTH & FOOD SAFETY

Better food. Healthier lives. A living planet.

The health of people, animals and the planet begins with the systems that connect us — and food is at the heart of them.

I am Dr Eleonore, a veterinarian, conservationist, food safety specialist and plant-based chef. My work brings together veterinary medicine, nutrition, food safety and environmental sustainability to explore one fundamental question:

How can we nourish life without compromising the health of people, animals or the planet?

From the food we feed our pets to the food we put on our own plates, and from the way we produce and handle food to the impact it has on ecosystems, our choices matter.

Through One Health, I help connect the dots between individual health, food systems and planetary wellbeing — turning scientific knowledge and real-world experience into practical solutions.

ONE HEALTH: EVERYTHING IS CONNECTED

Human health cannot be separated from animal health or the environment we share.

As a veterinarian who has worked across different countries and conservation settings, I have witnessed first-hand the consequences of our relationship with animals, food production and the natural world.

ONE HEALTH: EVERYTHING IS CONNECTED

My approach combines scientific thinking with a practical understanding of how food is produced, prepared, handled and consumed.

RETHINKING THE WAY WE EAT

Real food. More plants. A healthier relationship with nature.

I believe that food can be one of our most powerful tools for positive change.

A varied diet built around vegetables, fruits, legumes, whole grains, nuts, seeds and other minimally processed plant foods can support human health while helping reduce the environmental footprint of many dietary patterns.

Reducing excessive reliance on animal products, particularly those associated with resource-intensive production systems, can also contribute to lower environmental impacts. At the same time, responsible food choices must consider nutritional needs, food safety, accessibility and the wider context of each food system.

My philosophy is simple: eat more real food, explore the extraordinary diversity of the plant kingdom and make choices that nourish both people and the planet.

As a plant-based chef, I translate these principles into creative, colourful and flavourful food experiences. Because sustainable eating should not feel like deprivation. It should inspire curiosity, pleasure and a deeper connection with what we eat.

Food can be both a source of pleasure and a force for change.

FROM CONSERVATION TO THE KITCHEN

A different perspective on health

My professional journey has taken me beyond the veterinary clinic and into conservation and animal welfare projects around the world.

Working with animals and witnessing environmental challenges in different countries has shaped the way I understand health. Wildlife, domestic animals, humans and ecosystems are not separate worlds. They are part of the same living system.

Plastic pollution, food waste, habitat destruction and unsustainable production practices are not simply environmental problems. They can have consequences for animal welfare, ecosystem integrity and human wellbeing.

These experiences have led me to look beyond treating individual problems and towards addressing some of their wider causes.

The Global Plant-Based Foods Industry Could Make Up To 7.7% of the Global Protein Market by 2030

The use of plant-based foods is increasing a great deal as more people are becoming more health conscious and realising it is no longer sustainable to eat animal protein. The increase of green house gases, the massive land destruction, the animal welfare issue arising from intensive farming and the depletion of fish stocks are all contributors to the need for  a more sustainable way of eating which is going plant-based.

WHAT A PLANT-BASED DIET WILL DO FOR THE PLANET

Here are some of the many reasons why going vegan is the best thing you can do for the Environment

ANIMAL WELFARE:

When starting a plant-based lifestyle, you are not only improving your own health and well-being but also that of all animals.

By refusing to pay for animal products, you reduce the demand for them, which ensures fewer animals are bred in cramped conditions where they suffer massively and die in very bad conditions on farms and slaughterhouses.

Intensive factory farming keeps a high amount of animals in a reduced space to reduce costs, animals have very little to no access to sun light and the outdoors and the living conditions are extremely stressful as animals are cramped up and sitting/laying on their own faeces causing them infections and disease from which they die without ever getting any veterinary treatment.

Male chicks, are killed at just a day old simply because they can’t lay eggs and they don’t grow fast enough for meat production. This, happens regardless of whether a far is intensive, free-range or organic.

On dairy farms, cows are forcibly impregnated to produce milk and the calf taken away right after birth, so that, humans can consume the milk. The calf, if it’s female will be destined again for milk production and if male, normally slaughtered or become veal.

Fish farming causes the same problem in fish and when caught in the wild, a lot of by catch (other types of fish, dolphins, sea turtles, etc) is taken as well that is then thrown back dead overboard causing the massive fish stock and general marine life depletion that we are facing today.

AND, for those animal lovers that have pets, I introduce you to this new section where I will help you to help you pet get healthier as well!
